Black Bean Salsa

Ingredients:

  • One 15oz can black beans, drained
  • One 8oz can sweet corn, drained
  • 1 bunch fresh cilantro, finely chopped, large stems removed
  • 4 cloves garlic, minced
  • 2 T fresh lime juice
  • 1 t balsamic vinegar
  • 12 cherry or grape tomatoes, chopped
  • 1 ripe hass avocado, chopped
  • 2 T red onion, finely chopped
  • 1/2 t cumin
  • 1 T honey
  • 1 T hot sauce
  • tortilla chips

Directions:  Mix well and chill.  Can be made a day ahead.  Serve with your favorite sturdy tortilla chips for dipping.
